Instant Pot Tomato Soup
Hungarian cuisine is rich with soups. There is no main meal without soup as a first of primary course. I have to be honest, I miss soups. I often joke that I could live on soups and salads. I prefer brothy light soups based on bone broth, but I did develop a taste for creamier soups. I like my tomato soup with a sharp tomato base, but I discovered this recipe from Jennifer Robin’s book Paleo Cooking with Instant Pot, and I liked how the sweet potato brought down the acidity.
