Coconut Hemp Energy Balls

Hey Dora,

Meant to send you this a while ago! This is one of my favorite things to make for on-the-go eating. Came up with a few recipes like this a while back as I was tired of buying protein bars, etc for a quick bite at work. Has some sugar in it from the fruit, but very healthy overall 🙂


Coconut Hemp Energy Balls


These are great for a quick, satiating snack on-the-go. They are packed full of healthy ingredients that provide both energy and sustenance. Mix it up each time by changing the fruit and/or nuts. Enjoy!


Ingredients (all organic when possible):

  1. ⅔ cup dried fruit (I usually use mango or mixed berries – soak in water to soften first before cutting up into small pieces)

  2. ⅔ cup cashew pieces (or a mix – I like walnuts in there as well)

  3. ⅔ cup unsweetened coconut flakes

  4. 1 Tbsp chia seeds

  5. 2 Tbsp hemp hearts

  6. 1 Tbsp hemp protein powder

  7. 1 Tbsp coconut flour

  8. 2 Tbsp raw local honey

  9. 1 tsp vanilla extract

  10. 2 Tbsp coconut oil

  11. 2 Tbsp almond butter (or coconut butter, or a mix of the 2)

Directions

  1. Combine main group of ingredients in a large bowl – crush nuts into small pieces first if need be.

  2. Soften coconut oil and butter(s) in a small saucepan and combine with other ingredients

  3. Mix everything together thoroughly

  4. Mold into balls w/clean hands – this will be messy but it’s fun 🙂

  5. Lick the bowl and your fingers 🙂

  6. Put balls in fridge for 30 min to harden before eating.

Fresh for 2 weeks in fridge. They’ll get eaten long before then though…

(I usually 3x this recipe since I make some for family/friends)
